Four rating categories:

1. Food Availability: Is it there? Typical regional diets?Distribution of restaurants and markets?

2. Awareness: Are they knowledgable of "gluten free" and the added requirements for Celiacs?

3. Cultural Acceptance: Will they huff, jeer, be offended, or simply disregard your request?

4. Communication: How easily can "gluten free" be translated and requests made understood?
